Rows of cheese wheels ripening on racks in a marl cave, lit by a lantern

The one and only

Geulhemmer Grottenkaas

Cheese that ripens for months in the Geulhemmergroeve, the marl cave deep beneath South Limburg. You can taste it.

The story

In the Geulhemmergroeve, a centuries-old marl cave beneath South Limburg, our cheese ripens the way it always has: in the dark, in the cool, and with all the time the flavour needs.

i

The cave

Deep beneath South Limburg lies the Geulhemmergroeve, a marl quarry once cut by hand by block-breakers. Its passages run for kilometres and stay cool and damp all year round.

Air like that cannot be imitated anywhere. Between the soft marl walls, every cheese ripens slowly on.

ii

The time

Ripening is above all a matter of patience. The wheels rest on pine boards, where they are turned and brushed in turn and otherwise left in peace.

Over those months the rind slowly forms, and beneath it a full, deep flavour grows.

iii

The hand

Mitchel Sauer tends the wheels himself. Day in, day out, he turns, brushes and checks them by hand.

It stays craftsmanship, wheel by wheel.
